Apple Raisin Bread Pudding with Vanilla Sauce, by Sheryl Nelson of Montevideo

3 tablespoons of melted butter, 1 loaf approx 1 lb day old cinnamin raisin bread, cubed,  3 cups of chopped peeled tart apples, 7 eggs, 2 1/2 cups of milk, 3/4 cup of sugar, and 3 teaspoons of vanilla extract.

Pour melted butter into a 9 x 13 inch baking dish, combine bread cubes and apples , sprinkle them over the butter, In a large bowl, whisk the eggs , milk, sugar and vanilla..Pour mixture over bread.  Bake uncovered at 325 for 40 to 45 minutes or until a knife inserted near the center comes out clean. 

(Vanilla Sauce:) ingredients..2/3rd cup sugar, 1 tablespoon cornstartch, 1/8 teaspoon of salt, 1 cup of cold water, 1 tablespoon of butter and one teaspoon of vanilla extract.

In a small sauce pan, combine the sugar, cornstarch , salt, and water.  Stir together, Bring to a boil, stirring constantly , cook for 1 to 2 minutes , until thick..remove from heat, stir in butter and vanilla, and serve with warm bread pudding. mmmmmm gooood.! Serves about 12 people.

 

Fruit Soup, Christine Andreas of Montevideo

 

3/4 cup large tapioca , soak several hours then drain, 2 quarts of water, 1 cup of sugar, 1 cup of prunes, 1 cup of raisins, 1/2 tsp salt, juice of one orange, sliced 1/2 lemon, include rine, 3 apples , cut fine, 1 stick cinnamon , 3 or 4 whole cloves,

Mix soaked tapioca and other ingredients together and cook very slowly 2 to 3 hours, or in a crock pot for a longer time until done.  remove cinamon stick and cloves , ready to eat.

 

Mountain Cake, submited by Mary Keller.  A family favorite for dessert Christmas Eve.

Ingredients:  6 egg yolks, 3/4 cup cream of wheat, 1 cup of walnuts cut into chunks, 1/2 cup of bread crumbs, 2 cups of brown sugar, and 1/2 teaspoon of baking powder.

Mix all together.  Beat egg whites and fold in, Put into a 9 x 13 pan, Bake at 350 for a half hour.  Cool Cake.  When cool , remove from pan and crumble.  Whip 2 cups of cream.  Put a layer of cake in a bowl , a layer of whipped cream, a layer of cake, whipped cream, until all used up with a layer of whipped cream on the top.  Garnish with red cherries serves about 15 people....

 

Apple Puff by Mary lou Kurtzbein, Montevideo

Ingredients:  2 eggs, 1 1/4 cup sugar, 2/3 cup of flour, 2 1/2 teaspoons baking powder , 1/2 teaspoon salt, 1 1/2 teaspoons vanialla , 2 cups chopped apples, 1 cup chopped walnuts, whipped cream optional.

In a mixing bowl beat eggs, add sugar, beat real good.  add flour , baking powder and salt, mix well, fold in vanilla , apples, and nuts..pour into an 8 x 8 grased pan.. Bake at 350 for 25 to 30 minutes or until the topis crusty and filling is gooshy, Cut into squares and top with whipped cream.

FOR A LARGE CROWD OR BIG FAMILY (ELEPHANT STEW)!

Take one medium size elephant, cut into bite size pieces, make brown gravy to cover elephant pieces and put in oven. Cook for one week at 450 , till tender, will serve 362 people.  If not enough meat add two rabbits, But only if absolutley necessary as Most people Don't Like Hare in the Stew!!!!!!!!!!!!! ENJOY

 

Spicy Oyster Crackers from Irene Rupp of Granite Falls

Mix together 1 tsp of dill weed, and one package dry hidden valley dressing mix , then set aside.. Take 2 packages of oyster crackers in a large bowl pour on top of one cup vegatable oil, luke warm.  mix and sprinkle the dry dresing mix on top of crackers, mix well.  you can also put on one half tsp garlic salt, mix all together until coated, does not get soggy, do not bake.  put all crackers in a paper bag and shake all.  Store in a covered container or covered plastic container.

 

Spiced Pumpkin Custard Pie from Dianne Johnson of Montevideo

3/4 cup chopped pecans toasted, one cup of all purpose flour, 1/2 tsp ground ginger,1/2 tsp of salt, 7 tblsp of shortening and two tbsp plus one tsp of ice water.,...for the Filling:  2 eggs, 3/4 cup sugar, 1 tsp of ground cinnamon, 3/4 tsp ground allspice, 1/2 tsp ground ginger, 1/2 tsp salt, 1 can , 15 oz. solid pack pumpkin, 1 can 12 oz. evaporated milk, whipped cream, and additional ground cinnamon optional.

Place pecans in a food processor and grind finely, in a large bowl combine pecans, flour , ginger and salt.  cut shortening until mixture is crumbly. Gradually add water tossing with fork until dough forms a ball, Press dough onto the bottom and up the sides of an ungreased 9 inch pie plate...for filling , in a large bowl, beat the eggs, sugar, spices, and salt until smooth, Beat pumpkin, gradualy beat in milk and pour into crust.  Bake at 400 for 40 to 45 minutes , cover edges with foil during the last 15 minutes to prevent overbrowning if necessary and cool on wire rack.

 

Cranbery Orange Relish--Ms Bonnie Shaw - Clarkfield

1- package of cranberries, 1- orange rinse off, 1 apple cored, ...Grind three ingredients, add one cup of sugar, refrigerate, serve with turkey, chicken or ham.

 

Sweet Potato Casserole--Bev Anderson , Dawson Mn.

4 cups sweet potatoes mashed, 1 egg, 1/4 cup of milk, 1 tsp vanilla, 1 tsp each allspice, nutmeg, cinnamon, 1/2 tsp salt, 1/3 cup sugar, 1/4 stick butter melted, Mix all together , put in 8 x 8 glass dish.  for the topping.....1/2 cup flour and 2/3 cup brown sugar mixed together, add 1/4 cut melted butter and 1 cup of nuts...Put topping on top of sweet potato mixture, bake at 350 for 30 minutes uncovered.
